Apalachicola-Style Steamed Oyster Roast

Category: Florida Seafood & Fish Yield: 4 servings (scale 2/4/6/8 in the app) Prep 20 min Cook 25 min Total 45 min Method: STOVETOP Main: oysters

An oyster roast is a big batch of oysters steamed in the shell until they pop open, then served with melted butter, hot sauce, and crackers. Doing it in a covered pot on the stove makes it easy at home. Scale the people count in the app to 2, 4, 6, or 8 — ingredients adjust from this base of 4 servings.

Food safety

People with liver disease, diabetes, or weakened immune systems are at higher risk from Vibrio — eat oysters and clams only fully cooked. Buy tagged oysters only from a licensed seafood dealer and keep them cold until cooking. Steam until the shells open, then 3 to 5 minutes more, and throw away any that do not open.

Allergens: shellfish, milk, wheat

Equipment

  • large stockpot with lid
  • steamer rack or basket
  • stiff scrub brush
  • oyster knife
  • heavy gloves or folded kitchen towel
  • tongs

Ingredients (for 4 servings)

  • 48 live oysters in the shell, tagged
  • 2 cups water
  • 1/2 cup butter, melted
  • 2 tablespoons hot sauce
  • 2 lemons, cut into wedges
  • 1 sleeve saltine crackers

Directions

  1. 1. Scrub each oyster under cold running water with a stiff brush. Throw away any oyster with a cracked shell or one that stays open when tapped.

  2. 2. Set a steamer rack in the stockpot, add the water, and bring to a boil over high heat.

  3. 3. Add about half the oysters in a single layer, cup side down. Cover tightly and steam until the shells open, about 5 to 8 minutes.

  4. 4. Once the shells open, keep steaming 3 to 5 more minutes so the oysters are fully cooked. Throw away any oysters that do not open.

  5. 5. Lift the oysters out with tongs onto a platter. Repeat with the second batch, adding more water if the pot runs low.

  6. 6. Holding each hot oyster with gloves or a folded towel, use the oyster knife to pry off the top shell and loosen the meat.

  7. 7. Serve right away with melted butter, hot sauce, lemon wedges (scrubbed before cutting), and crackers.

  8. 8. Chill any leftovers within 2 hours (1 hour if the room is above 90°F).

Steaming oysters until they open, then cooking them longer so they are fully done.
