Food safety

Scrub limes under running water before zesting or cutting. Refrigerate opened coconut water and coconut milk. Do not leave the cooler out more than 2 hours (1 hour if above 90°F).

Allergens: None listed

Equipment

  • blender or pitcher with lid
  • fine grater
  • citrus juicer

Ingredients (for 4 servings)

  • 3 cups coconut water, chilled
  • 1/2 cup canned coconut milk, well stirred
  • 1/4 cup fresh lime juice
  • 1 teaspoon lime zest
  • 3 tablespoons sugar
  • 2 cups ice cubes

Directions

  1. 1. Scrub the limes under running water and dry them.

  2. 2. Grate 1 teaspoon of zest with a fine grater, taking only the green skin and not the white pith. Then juice the limes.

  3. 3. Put the coconut water, coconut milk, lime juice, lime zest, and sugar in a blender or a pitcher with a lid.

  4. 4. Blend 15 seconds, or cover and shake hard for 30 seconds, until the sugar dissolves and the drink is smooth.

  5. 5. Pour over ice and serve right away.

Skill taught

Zesting citrus without the bitter white pith.

Affordable substitution

Use plain water with 3/4 cup canned coconut milk in place of the coconut water and coconut milk.

Optional variation

Blend in 1 cup frozen pineapple chunks for a thicker, frosty cooler.

Leftovers & storage

Refrigerate in a covered container at 40°F or below and drink within 1 day. Shake or stir before serving because the coconut milk separates.
